I tried to have as many options/launch parameters the same between both steam and bottles. In-game the difference is even higher, but the menu was easy to test as it already contains a nice large amount of the cpu-intensive mice and it is always exactly the same.

I have added screenshots with full mangohud display, maybe that gives some hint. Especially since there are plenty of games in Bottles that do use 99% utilisation of the GPU. I suspect the CPU is not utilised through Bottles, while proton shows no such limitation. When VKD3D 2.7 was released, I finally could run the game through Bottles itself, but it seems to be bottlenecked for some reason. Recently I was running Plague Tale temporarily through Steam Proton, as VKD3D 2.7 was needed to get Bottles working, I saw fortunately that through steam the game works wonderfully, even with the DLSS mod.

I have thought about running lutris to install stream for windows and installing DRG through that to see if the issue follows away from proton and steam for linux. I get similar logs from multiple versions of Proton including experimental and ProtonGE. I have not re-installed steam as of yet because other proton enabled games are running without issue.
